Trofie pasta with cabbage
My favourite winter pasta. It is easy and quick to make, and you do not need to wait until the next Christmas market to enjoy it.
Serves 4 to 6 and needs approx. 30 minutes to prepare.
Ingredients
- 1/2 white cabbage (approx. 750 g)
- 400 g Trofie pasta (Italian pasta)
- 1 onion
- 50 g Speck cut into cubes (you can use bacon instead)
- 2-3 tbsp ghee or unsalted butter
- 250 ml of vegetable stock
- Salt and pepper
- Sugar
- 1/2 to 1 tsp caraway seeds
- Two stalks of parsley
Step by Step Guide

Remove the outer leaves of the cabbage. Quarter the cabbage, cut out the stalk cut into fine slices.

Peel the onions, finely slice and sauté with the speck (you can use bacon instead) in 1 tbsp ghee or unsalted butter for a few minutes. Add the cabbage and cook with it.

Pestle the caraways seeds in a mortar.
Deglaze with the stock and season with salt, pepper, sugar and the caraway seeds - stew for about 20 minutes.

In the meantime cook the Trofie pasta in boiling salted water and drain in a colander.
5.
Sweat the cooked Trofie pasta in the remaining ghee or unsalted butter in a large pan for about 5 minutes, fold in the cabbage and bacon mixture and toss.
6.
Wash parsley, shake dry and sprinkle over.
Serve with a leave salad.
