Aioli - no egg

My favourite aioli. It only needs a bit of milk, oil and spices.

As it does not contain any fresh egg it is perfect for a picnic or barbeque in the sun.

Serves 2 and needs approx. 10 minutes to prepare.

Ingredients

  • 2 cloves of garlic
  • 1 lemon
  • 50 ml milk
  • 100 g of coarse Dijon mustard
  • 100 ml of virgin vegetable oil
  • ½ bunch of parsley or tarragon
  • ½ of a small, red chilli pepper (de-seeded) and finly chopped
  • 30 g sweet paprika powder
  • 1 pinch of sugar
  • Salt from the mill

Note: The milk and the oil should have the same (room) temperature.

Wash the lemon, finely chop the chilli pepper, garlic, and tarragon or parsley, and set aside.

Take a small bowl and mix the milk with a blender.  Gradually add the oil until creamy.

Mix the sauce with the lemon juice, mustard, chilli, garlic, tarragon (or parsley).

4.
Season with paprika powder, sugar and salt to taste. Keep the aioli in the fridge until needed.

In the fridge it will keep fresh for 1 day.
