Apple & Pancetta Pasta Bake
Looking for a quick supper everybody can enjoy? This easy, pancetta and apple pasta recipe ticks all the boxes.

Serves 4 and needs approx. 30 minutes to prepare and 15 minutes in the oven.

Preheat oven: Fan assisted to 130˚C.

Ingredients

  • 2 green apples
  • 1 medium sized onion
  • 120 gr pancetta (diced or cut into strips)
  • 300 gr troffie pasta
  • 300 gr Gruyere cheese (grated)
  • 2 tsp Olive oil
  • Salt & freshly ground black pepper
  • Oven safe dish

Finely chop the onion and peel, quarter and core apples. Cut apple quarters into 1.5 cm pieces.

Preheat the oil in a pan and the diced pancetta and onions, cook until golden (approx 5 minutes). Reduce to medium heat, add the diced apple, stir and cook for another 5 minutes. Set the mixture aside.

Cook the troffie in boiling, generously salted water according to the packet instructions. Drain in the colander.

Add the troffie and the pancetta-onion-apple mixture to the oven proof dish and stir. Scatter the grated cheese and mix well.

Bake in the pre-heated oven for about 15 minutes until piping hot and the cheese is melted.

Add a leave salad as a side and enjoy.
